Wild Turkey Jambalaya
From the kitchen of Chef Marshall "Bubba" Shields, Mobile, Alabama
Prep Time: 20 Minutes
Cook Time: 45 Minutes
Serves: 6

1/2 Wild Turkey Breast, cut in cubes
1 lb Smoked Sausage, sliced
2 Chopped Vidalia Onions
2 Chopped Bell Peppers
1 Diced Jalapeno Pepper (optional)
1 Pod Diced Garlic
4 Stalks Chopped Celery
1 Bushel Chopped Green Onions
1 Can Chopped Tomatoes
3 Bay Leaves
1 1/2 Cups Rice
3 Cups Chicken Broth
2 T Creole Seasoning (Tony's)
1 T Worcestershire Sauce
1 T Tabasco
1 T Thyme
2 T Olive Oil

In a large pot, heat oil over high heat then add Wild Turkey, Sausage, garlic and Creole Seasoning.  Cook for approximately 5-7 minutes, or until golden brown, and set meat to the side.  Add another dash of oil to the pot, reduce heat to medium then cook onions, peppers, celery and bay leaves for about 8 minutes or until the onions become soft and translucent.  Add the tomatoes, green onions, meat and chicken broth.  Season to taste using tony's, tabasco, wooster and thyme.  Let this mixture simmer on low-medium heat for about 20 Minutes until the flavors to combine.
After you are pleased with the taste, bring mixture to a boil and add the rice.  Cover and simmer on low for another 20 minutes.
